Étish usuli :
1 . Goshni ushshaq toghrap yaki mashinidin otkuzup , uninggha ushshaq toghralghan piyaz , tuz , soqqan zire , qarimuch arlashturup qiyma teyyarlindu .
2 . Xémirturuch qattiq bulsa sugha sélip ézip , ungha silip , tuz quyup xémir yughurup , azraq tindurup , uningdin 200 giram we 140 giram qilip zuwula uzup tawlap , her bir zuwulning girwikni népiz , ottursini qélinraq qilip jilit échip , chong jilitqa teyyarlanghan qiymini tekshi yéyitip , ustiidin kichik jiltini yépip chong jiltining girwiki bilen chimdip yipishturup , goshnan teyyarlindu .
